UWAAA SOUSEI-SENSEI I mean. Sousei is another sane one, a coolheaded guy who doesn't seem fazed easily by anything. His no-nonsense manner is a breath of fresh air from all the crazy young people Edgeworth hangs out with; it's good to just sit down with a cup of tea and discuss things calmly even when things are all but calm. No jokes, no trolling, just cold hard serious facts and talking about sparring and further fighting lessons for Edgeworth.

Plus, he doesn't go easy on Edgeworth, which is 100% okay with him because he really has to hone his skills and continue to fight if he is to survive here and be more useful than just be a dinky police department secretary. Edgeworth isn't looking for special treatment or someone to please ease up on the sparring a bit pls. He's looking for a sparring partner/teacher who would really present a challenge and help him grow as a fighter, and Sousei is just what the doctor ordered.
