Ankh doesn't have much of an opinion about him other than just oh look, an optimistic human child. Though despite all possible appearances to the contrary, he doesn't necessarily think that's a bad thing.
Ankh really doesn't know enough about him to say anything, other than that memory made him think of Eiji a bit, in the sense of apparently being duty-bound to protect everyone ever. At least Ryuuga seems to have a reason for that, as opposed to Eiji just sort of deciding it on his own. And he's noted Ryuuga is a solid fighter based on what he saw there, too. That clip was so ridiculous though what were you guys even doing?
it's honestly probably one of the more ridiculous fights in the entire franchise, tbh - but the rival fights tend to get ridiculous in the series as a whole. (see: Kouga and Rei's first major fight in the first season involving them running down buildings while trying to beat each other up during the climax of it)
and at least it's not one of the many fights where Jinga pins Ryuuga to the nearest flat surface. he's got a hilarious kabedon obsession with him :'|
See, being a bird sucks sometimes, because he imprinted on this moron who just wants to make pillows with his feathers and now he can't stop following him around.
But duckling jokes aside, he actually has a tremendous amount of loyalty and respect for Eiji at this point. It means a lot to him, having someone he knows he can trust. And like you said, he's a balancing influence, since Ankh really needs to get knocked in the head with a moral compass every once in a while (and the damn thing started leaving little pieces behind in there at some point. You're turning him into something vaguely resembling a good person, Eiji, how dare you). Ultimately he thinks there's a place for Eiji's trust and optimism, even if comes out sounding horribly naive a lot of the time. And he misses it, because Eiji's not nearly as much like that as he was, and it's concerning.
He will probably never entirely understand Eiji's capacity to be so attached to him and to forgive him for everything, but he certainly appreciates it. Because he's also used to being used, and Eiji went to the trouble of saving him not for any kind of benefit or because Ankh did anything in particular, but just because he wanted him to be there. And that's important.

First impression is she's... interesting. For one, he hasn't figured out what the weird energy he's sensing from her is, which is probably the only reason he noticed her in the first place. But she is also wise beyond her years. That line about people looking for a particular answer even if they don't know what they're looking for impressed him. He, being a creature who senses the desires of others, innately understands that concept, but it's not something he was expecting to come from the mouth of a random kid.
But in all seriousness, Ankh immediately liked Jinga once they, you know, both suddenly sprouted wings and then started actually talking instead of grumping about being stuck in a giant beach ball. He gets the impression they're similar in several respects, and unlike how it is with the other Greeed, it's not just the bad ones.
