Iris has a lot of respect for "Mr. Edgeworth". A lot. Here was someone who obviously meant a lot to Phoenix, in order for Phoenx to trust him so much as to call him all the way back home in order to defend her. Who wasn't even a defense attorney, and yet was willing to tell a small fib to the courts in order to ensure that the trial made it through that important first day, giving Phoenix the time he needed to recover. Who trusted her after a single meeting, and was willing to believe in her innocence.

I can only imagine the conversation the two must have shared off-screen during the time from she was taken from the Detention Center all the way back to Eagle Mountain, before they ran into Phoenix and the earthquake hit. It must have been incredibly interesting to indicate they weren't even done yet, and expressed interest in continuing it at a later time. But I would like to think that they had maybe shared some more details about Iris' past, in particular, further showing a budding, friendly relationship.

They're both two of the saner calmer members of the AA crew, and it would not be unthinkable for them to sit off to one side, casually drinking tea while insanity erupts all around them. Edgeworth with a look of slight exasperation, and Iris with that bright (genuine) smile of hers.

So, in short, she likes him very much, can see why he would be such good friends with "Feenie", and enjoys talking to him because he treats her with sincerity and respect, wiling to be honest when she asks him to be. And it really does mean a lot to her that he doesn't hold her not currently being in prison against her.
